Rice with chicken, carrots and cranberries

Ingredients 

  • 2 cups cooked rice
  • 1 chicken breast cut into cubes 
  • 1/2 cup chopped leeks
  • 1 onion, peeled and chopped 
  • 1/2 cup peeled and sliced carrots 
  • 1/4 cup dehydrated cranberries 
  • 1 teaspoon turmeric powder
  • 2 tablespoons olive oil 
  • Salt and ground black pepper to taste

Preparation method

In a frying pan, add the olive oil and heat over medium heat. Add the onion and leek and brown. Add the chicken and sauté until golden brown. Add the carrots, season with salt and black pepper and sauté for another 2 minutes. Add the turmeric and cranberries and mix well. Finally, add the rice and stir to combine. Turn off the heat and serve. 

Baked chicken breast with peppers 

Ingredients 

  • 2 chicken breasts cut into cubes
  • 4 peeled and chopped garlic cloves
  • 1 peeled and diced onion 
  • 1 green bell pepper seeded and diced
  • 1 red bell bell pepper seeded and diced 
  • 1 yellow bell bell pepper seeded and diced 
  • Salt, ground black pepper, paprika and olive oil to taste

Preparation method

Grease a baking dish with olive oil and arrange the chicken, peppers, onion, garlic, salt, black bell pepper and paprika. Stir well and drizzle with olive oil. Bake in a preheated oven at 200°C until golden brown. Serve afterwards.

Sweet potato stuffed with chicken

Ingredients 

  • 2 sweet potatoes 
  • 100 g cooked and shredded chicken breast
  • 1 onion, peeled and chopped 
  • 1 pinch of paprika
  • 1 tablespoon of water
  • 1 tablespoon of chopped parsley
  • Salt, ground pepper, oregano and olive oil to taste 
  • Water

Method of preparation

In a saucepan, place the sweet potatoes, cover with water and bring to the boil over medium heat until they are soft. Meanwhile, add the olive oil to a frying pan and heat over medium heat. Add the onion and sauté until wilted. Add the chicken, salt, paprika, black pepper and oregano and mix well. Turn off the heat, add the parsley and stir to combine. Set aside.

Drain the potatoes, let them warm up and, using a knife, cut them in half lengthways. Then, with a spoon, remove the core, brush the inside and outside with olive oil and arrange on a baking sheet. Fill with the chicken and bake in a preheated oven at 180°C for 15 minutes. Serve afterwards.

Chicken burger

Ingredients 

  • 400 g ground chicken breast
  • 1 onion, peeled and grated 
  • 1 egg
  • 1/2 cupfine flaked oats
  • Salt and chopped parsley to taste

Method of preparation

In a bowl, place the chicken, onion, egg, oats, salt and parsley and mix well. Then, with the help of a spoon, take some dough, shape it into a hamburger and place it on a baking sheet. Repeat the process with all the dough and refrigerate for 1 hour. Then take the burgers out of the fridge, place them on a preheated grill over medium heat and brown both sides. Serve afterwards. 

Chicken meatball with oats and carrots 

Ingredients 

  • 300 g chicken breast cut into cubes 
  • Juice of 1 lemon
  • 2 crushed garlic cloves 
  • 1 carrot peeled and grated 
  • 4 tablespoons of finely flaked oats
  • Salt, ground pepper and chopped parsley to taste
  • Oil for greasing 

Method of preparation

In a blender, place the chicken and grind well. Transfer to a bowl and season with lemon juice, garlic, salt and black pepper. Add the carrots and oats and mix until you have a homogeneous mass. Add the parsley and stir to combine. Then, with the help of a spoon, take some dough, shape it into a ball and place it on a baking sheet greased with olive oil. Repeat the process with all the dough and bake in a preheated oven at 180°C until golden brown. Serve afterwards.
